One-Bowl Vegan Pumpkin Muffins


These muffins are super easy, very tasty, and low in sugar. They are perfect with a morning cup of tea, and toddler approved in my house! They make between 12-15 muffins.

Ingredients

1 ¾ cups of all purpose flour

¼ cup white sugar

¼ cup brown sugar

1 tbsp baking powder

½ tsp salt

2 tsp pumpkin pie spice

1 cup puree pumpkin

2 tsp vanilla extract

½ cup unsweetened coconut milk

½ cup olive oil

Instruction

  1. Preheat the oven to 375 degrees

  2. Combine the dry ingredients: flour, white sugar, brown sugar, baking powder, salt, and pumpkin pie spice in a large bowl and mix thoroughly. Add the wet ingredients: pumpkin, vanilla extract, unsweetened coconut milk, and olive oil and stir until well combined.

  3. Line a muffin pan and fill each about 2/3 of the way. I use an ice cream scooper to transfer the batter to the muffin pan. You can sprinkle a little cinnamon and sugar or brown sugar on top of each muffin if you would like. I usually go with a little cinnamon and sugar sprinkle on each for added flavor.

  4. Bake for 15-20 minutes or until a toothpick comes out clean.

  5. Let cool and enjoy!
